5-course Tasting Menu by Chef Roman with wine, sake and mezcal pairing from Casita & Garden

Mexico has a rich history of cultivating fruits and vegetables that spans thousands of years with civilizations like the Maya and Aztecs being pioneers in agriculture, growing staples like maize, beans, squash, tomatoes, chilies, avocados, and cocoa. Spanish influence introduced new crops and plants contributing to the complex, colorful and culturally rich and delicious Mexican cuisine we know today.

For vegans and vegetarians, Mexican cuisine offers vibrant and flavor-rich options by expertly leveraging chilis, moles and spices that naturally compliment plant-based dishes. I hope you can join me on this vegan/vegetarian adventure with the introduction of my Ve-ga-narian de Mexico menu. Two of the courses offer both a vegan and vegetarian option The other courses are 100% vegan.

 

Amuse Bouche: Cauliflower “Bite”

Roasted, chili-marinated cauliflower, topped with pickled onions, served with an almond mole on a hoja santa leaf (Vegan)

 

First Course: Chicharo Puree

A soup of pureed peas, accented zucchini, and corn sauteed in chili oil, homemade croutons and seasoned with watercress, mint and epazote (Vegan)

 

Second Course: Tempura Avocado Taco

Tempura avocado, served with a chipotle and cashews sauce, pickled vegetables on a fresh tortilla (Vegan)

 

Third Course: Red Pepper Mole

Grilled mushrooms served on a red pepper mole and dusted with a garlic and parmesan crumble.  Accented with white truffle oil (Vegetarian/Vegan - not served with parmesan crumble)

 

Fourth Course: Eggplant Medallions

Chili-crusted eggplant medallions, served with cumin seasoned lentils and a Chiapas mole.  Accompanied by an arugula and sun-dried tomatoes and a green plantain chip (Vegan)

Intermezzo

An orange, rosemary flavored sorbet (Vegan)

 

Fifth Course: Mole Brownie

A black mole infused brownie served with a mezcal ice, a fruit compote, and a mole crisp (Vegetarian/Vegan - not served with brownie)
