5-course Tasting Menu by Chef Roman with wine, sake and mezcal pairing from Casita & Garden

Mexican celebrations and holidays are vibrant and culturally rich blending indigenous traditions, Spanish influences, and religion. Sometimes going on for multiple day, family, music, dance, singing colorful clothing, parades, drinking and eating all play an important role in making the festivities memorable. Food is one of the most critical festive elements with some dishes being served only during these celebrations. The following menu is my version of some of the most popular traditional dishes served during these celebrations. Viva Mexico!!!

 

Amuse Bouche: Easter Birria Sope

A sope topped with chihuahua cheese, lamb birria, and a cilantro horseradish salad.

 

First Course: New Year Pozole Blanco

Shredded chicken with adobo chile sauteed with hominey cream sauce. Served with a tostada and topped with a purple cabbage salad.

 

Second Course: Tamales de Navidad

A tamale served with a vegetable ratatouille on a mirror of chipotle and garlic sauce.

 

Third Course: Día de las Madres Salad

Mixed lettuce tossed with edible flowers, strawberries, caramelized walnuts, and Roquefort cheese dressed with a raspberry vinaigrette, accented with a rose wine and pink pepper reduction, and highlighted with the essence of rose water.

 

Fourth Course: Independence Chiles Nogada

A poblano pepper stuffed with beef and pork, herbs, and fruits, topped with a walnut, goat, and cream cheese sauce and accented pomegranate “caviar”.

 

Intermezzo: Dias de los Muertos Sorbet

An orange flavored sorbet in honor of Pan de Muerto one of the most popular offerings for the celebration.

Fifth Course: Pastel de Cumpleanos

A meringue frosted, cherry topped, vanilla sponge cake with pastry cream, served with tres leches ice cream on a cinnamon crumble.
